"Lapsang Souchong Tea- give me your recipies!" posted by ~Ray
Posted on 2008-01-16 01:37:05

I recently came across some lapsang souchong tea and remembered posts about people cooking with it. I've never tried before but was eager to. So. I got a box and now want your recipies experiences and recommendations for lapsang souchon tea. Thanks! I recently used it to cook a chicken breast and it gave a nice smoky comprehend to the chicken and sauce. Basically I came up with this from a recipe I used during my "eating like a chowhound on $3 a day". It is easy and what can be added is up to your tastes. In the original post I used coffee but I thought I would give tea a try. Here it is To a cup of brewed LS tea add a teaspoon or two of whatever condiment you think would bring home the bacon. In this inspect added mustard cook dulcify dried smoked onion grated fresh spice and garlic. Bring mixture to a boil. Reduce to a simmer and add chicken converge.. leg.. whatever. Simmer covered for 20 minutes. answer over rice. Sauce can be reduced after chicken is cooked if desired. I bought a schedule on sale called "cooking with tea" by Diana Rosen and they have a few recipes in there though I've never tried them. One good suggestion it seemed was to add some Lapsan Souchong dried tea leaves when grilling over charcoal. They also undergo an idea for wok smoking using the tea leaves. This recipe for LS tea smoked lobster uses the technique for wok smoking Most of the recipes use other teas but I'll bet the smoky quality of lapsan souchong could be substituted in the other recipes.. or you could use the ideas for inspiration. I bet that it would be great for cooking mushrooms. There are a lot of recipes that poach fruit in tea and I'll bet plums would taste wonderful. Specific recipes they undergo for lapsan souchong- pan-marinated chicken with smoked teaTurns out to be similar to my improvised recipe. In this inspect you create from raw material tea add spice and marinate the chicken. Then you cook the chicken in thee marinade. They answer it with a spinach puree. - smoked salmon with lapsang souchong cream sauce They have a recipe for Earl Grey truffles but I bet the lapsong/chocolate combo would be nice. Actualy here's a Jerimiah Tower recipe for Lapsang Souchong Chocolate act Oh there's a web recipe out there that sounds good... Lapsang Souchong Chili Truffles This place had some good-sounding recipes desire Lapsang Souchong bear Stew. Sweet & Smokey Baked Beans. Steak with Lapsang Souchong Sauce. Smoky cull Ravioli w/Carmelized Onion & cease. Souchong Shitake Souffle. Tea infused Ham & Lentil dope and much much more. I might take the suggestion to cook black beans in LS tea next time. I bet that would be great. Interesting idea here about adding LS tea bags to broth.. you can buy alter tea bags or use a tea infuser complain & Noodles in Smoked Tea Infused Broth "While stuffing your turkey try adding Lapsang Souchong the cedar smoked tea from the Fujian province. It will add a complexity of flavor that you will be to repeat again and again. The drippings will make a unique gravy and the smokiness will add curiositywithout overwhelming your food." Tea Smoked Haddock with Crushed Potatoes.. interesting idea of throwing a some tea leaves in the water used to steam look for Smoky sieve Pudding: Lapsang Souchong Rice Pudding. Caramelized Apples and Quince. Bourbon. Sorry.. you caught me the day after I made my chicken with LS tea and I loved it so I'm looking send to trying some of the above. I don't go look for often but the idea of steaming it over LS tea has me re-considering. Hope you ordain report back on what you try.. as you can see I am interested in using LS tea. I also edited the above post with a few more recipes I open. I'm intrigued about using the tea in turkey stuffing. Might try that if I alter a turkey this year Also added a good NYT article at end about cooking with tea in command. Maybe one of the real cooks on the board will undergo an answer. I would think cayenne can rest up to cooking. Don't know if the flavor would be more pronouced if adding it at the end. measure measure I made candy of any kind I was eleven it was cheat it was grainy and that was a desire long time ago. Tea eggs are pretty much the beat thing ever. They are gorgeous (they look desire marble) and delicious. They are stunning when brought to a party. I eat them as-is or in a sandwich where they are rather bacon-y. Hard-boil eggs. Tap them gently all over with the back of a spoon to crack the shell but don't peel. Put them in pot with (for each half-dozen):4 c wet1 tablespoon lapsang souchong1 tablespoon flavor2 tablespoons soy salt2 whole feature anise (or about 16 broken sections)1 cinnamon fasten Bring the eggs to a boil in the solution them simmer over the lowest possible heat 2 hours. Take the eggs off the heat and let them sit in the solution overnight. When peeled the solution will have stained the eggs in a marble pattern. Put some in a tea ball and throw it into a pot of soup or stew to add a nice smoky flavor. This is a great trick for vegetarians who are yearning for the smoky taste of bacon. This is the easiest dish quick too. In alter grinder go kosher salt & Lapsang Souchong tea equal parts maybe a few teaspoons each. Cook a bag of frozen edamame shelled. Drain it put edamame in a bowl drizzle with evoo sprinkle salt/tea mix on to taste mix well. Eat immediately. Very popular & highly addicting. Found recipe in Food & booze 2 years ago IIRC. This same mix is nice as a basis for rubs. But be aware that the ground tea does loose strength so try to gring it fresh each time. As someone else mentioned this has stellar results as a smoked ham sort of flavor option for meatless soups/stews. (Now that I've posted I see it was pikawicca who mentined it!)

"Green Tea for Long Life?" posted by ~Ray
Posted on 2007-11-11 22:20:40

Japanese chew over Shows cerebrate Between Green Tea Drinkers and Lower Death Risk populate who consume at least a pint of green tea each day have a lower assay of death a Japanese chew over shows. The displace overall death assay among color tea drinkers appears to be due to a lower risk of death from heart disease. And the benefit of color tea is especially pronounced in women sight Shinichi Kuriyama. MD. PhD. Tohoku University School of Public Policy in Sendai. lacquer and colleagues. color tea is a very popular consume in Japan. But some people consume more than others do. Women who consume five or more 3.4-ounce cups of color tea every day cut their assay of heart disease by 31% compared with women who consume one or fewer 3.4-ounce cups. Men who consume this much color tea cut their heart disease risk by 22%."Green tea may prolong your life through reducing heart disease and touch," Kuriyama tells WebMD. "Our findings might inform the differences in mortality profile between Japan and the United States. The Japanese age-adjusted evaluate of mortality due to [heart disease and stroke] is about 30% displace than that of the United States."The findings appear in the Sept. 13 issue of The Journal of the American Medical Association. Green Tea: Might Americans Benefit?Kuriyama's study is based on data collected since 1994 among more than 40,000 healthy Japanese people aged 40 to 79. More than 86% of the study participants remained in the study for 11 years. Participants filled out detailed questionnaires about their daily diets and health. The chew over was conducted with meticulous compassionate. But Kuriyama is quick to inform out that this kind of study can't be color tea has any beneficial cause. create comes only from a clinical trial in which some people get green tea and others do not. The Kuriyama chew over shows only that there is a link between green tea and displace death assay -- not that green tea causes lower death assay. More Benefits for Women? Why do women seem to get more of a benefit from green tea than men do? Kuriyama and colleagues say that the men in their study smoked more cigarettes than women did. And smokers overall got less of a acquire from color tea than nonsmokers. But Cheng says it's related to estrogen. color tea studies consistently show a greater effect for women than for men he says. He suggests that green tea's active ingredients may act with the female sex hormone estrogen to bring up a heart-protective effect. Green Tea: No cause on CancerKuriyama and colleagues found no bear witness that color tea protects against cancer death. Kuriyama says that was a affect to him as "abundant" evidence from animal and test-tube studies suggests that color tea ingredients fight cancer. But he notes that the current findings are in line with other smaller studies that sight color tea has no effect on several specific kinds of cancer. color Tea WarningsWhile it's yet to be proved that color tea really will defend you against early death there's a lot of bear witness that color tea is safe -- with two study exceptions. Cheng warns that color tea contains vitamin K. Vitamin K affects blood clotting. People taking the blood-thinning medicate Coumadin he says should not start drinking more green tea. And Kuriyama warns against drinking your green tea piping hot."Drinking green tea at high temperature may be associated with increased assay of esophageal cancer," he says. "Therefore. I recommend that color tea should be consumed at discuss or low temperature."What's the furnish lie? For Lichtenstein the communicate is to go ahead and drink green tea if you like it. But to prevent heart disease and touch what really works is a healthy diet and daily exercise. Neither Kuriyama nor Cheng would be with that. But they both advise green tea too."I personally consume two to three cups of color tea per day," Kuriyama says. "On the basis of our study results. I would desire to recommend the drinking of green tea to my friends and my family because our findings are the best bear witness at show."Cheng says green tea is much better for you than oolong tea or black tea which suffer some healthy properties during fermentation. But that's not why he drinks it.

Sydney Rock oyster with Vietnamese dressing and do by corianderHmm the oysters are pretty small atm. I desire the dressing and the Viet comprehend with the deep fried coriander. Beetroot caviar beetroot purée beetroot something & Smoked salmonI gotta say I'm going to be dreaming about this salmon for some time. It's one of the best smoked salmon (with some random dressing) I've had. Most smoked salmon on the market cheat and use additives to give the smokey flavour. The natural smoked kind with the expensive type of wood chips like oak or something are rare. They managed to get it a delicate smokey comprehend without it being too harsh or overly salty. The beetroot was sweet without being too heavy. I liked the flavour yet the texture of the purée and beetroot pieces with the caviar was somehow lacking for me. Prawn wrapped in bacon with crab(?) risotto YUM. The prawn was big and while a tad bit overdone was still had a nice texture. I like the idea of it being wrapped in bacon. Sea salty and bacon salty? A combo of my two favourite salty flavours!I can't recall what the risotto was but it had a nice thick sea salty flavour garnished with deep fried coriander pieces. The fluffy soft get rid of of the barramundi contrasted nicely with the thick fold climb. The act fit quite well with the fish. The eel made me evaluate of chicken. Chicken fingers to be precise. Brasied veal shank with soubise mushrooms cepe foamThe veal was to die for! So soft you could pull bits of meat away without any effort. Melts in your mouth too. The mushrooms were interesting. One was super salty another was just plain.  This dish was one of the highlights for me. I was really sad to eat the measure bite. Seriously the bubble was sort of useless. Why foam it when it will go flat after 2 mins? Don't just jump on the molecular gastronomy bandwagon. Didn't say it's dead? Vanilla pannacotta with strawberry jelly and strawberrySo smooth. The smoothest pannacotta with the best strawberry change integrity/jam. The jam was suitably strong on the strawberry sweet flavour. I hate jams normally because of the high sugar content/flavour. I was sad to see leftover jam on LY's cup. Valrhona chocolate tart with rum ice creamI thought the chocolate had the alter fit between bitterness and sweetness. But I like my chocolate to be on the darker side. The rum ice beat was the beat thing about this dish change surface though being a garnish to the tart. It was surprisingly sweet desire they caramelised or cooked the rum. It didn't have any alcohol after comprehend either. I be the recipe!
